The LOVE of My Life...

So thankful to be married to the LOVE of my life, and my BEST FRIEND! Life just keeps getting better, and it doesn't matter what happens as long as you're by my side! 😘

Aty: "Mommy I'm gonna help you (pauses)...because you're doing it wrong."

Aty and Bria pretending they are King and princess. Aty says to Bria who is the "King". "Show me your muscles because kings are strong." She then giggles..."I'm  laughing because I like your muscles." 

Bria: "I can't find my boots mommy, somebody stealed them!" 

Aty: "Mommy, I want to buy something!" 
Me: "You want to buy something with your money?"
Aty: "No, I want to buy something with Daddy's money!"

Bria: "I tooted...(giggling) that's so icky!" 

Aty after I came back in from filling the van with gas..."mommy, did it swallow up all the gas?" 

Bria talking to Robert: "I love you buddy, but I'm teasing you."

Aty was talking on her pretend little phone when she dropped it. She picked it up quickly, and said, "whew, not even a scratch!"

Berry Oat Crumble Bars

Berry Oat Crumble Bars

Yield: one 13 x 9 pan, 12 squares
Prep Time: 10 minutes
Cook Time: about 30 minutes
Total Time: about 2 1/2 hours, for cooling

·         3/4 coconut oil, melted
·         1/2 cup honey
·         1/4 cup maple syrup
·         1 teaspoon vanilla extract
·         2 cup oat flour (or old fashioned oats ground)
·         1 ½  cup old-fashioned whole-rolled oats (don't use quick cook or instant
·         ½ teaspoon salt

Fruit Filling:
·         ¼ cup black raspberry preserves (used Smuckers Simply Fruit)
·         1 cup frozen mixed berries slightly thawed and puréed (I used my bullet)

1. Preheat oven to 350F. Line a 13 x 9 inch pan with aluminum foil and spray with cooking spray; set aside.
2. To a large, microwave-safe bowl melt oil for about 1 minute. Add honey and maple syrup, vanilla, and whisk to combine.
3. Add the flour, oats, salt, and stir to combine. Mixture will be a little crumbly.
4. Set 1 ½  cups crumb mixture aside to be sprinkled on later as crumble topping. Pour mixture into prepared pan.
5. For Filling: Mix preserves in with pureed fruit. Evenly spread over the crust making sure there's complete coverage. Fruit mixture should be about 1/8-inch to 1/4-inch thick.
6. Evenly sprinkle with the reserved crumble mixture.
7. Bake for about 30 to 32 minutes, or until edges are set and center has just set and is lightly golden browned. Place pan on a wire rack and allow bars to cool for at least 2 hours before slicing and serving. Or serve warm with Vanilla Ice Cream for a yummy dessert! Bars will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months (if you can get them to last that long! J)

Tuna Pasta Salad

Whether it's a hot summer evening, or a crisp fall day this is a perfect dinner that can be done in 30 minutes or less!

Tuna Pasta Salad
Serves 6

1/2 Pound Spiral Pasta
2 cans tuna (5 oz.)
1 cup mayonnaise
1 cup shredded Cheddar cheese
2 stalks of celery, diced
1/4 green pepper, diced
Grape tomatoes, cut in half

Cook pasta in salted (1/2 teaspoon salt) water according to package directions. In a separate bowl mix tuna and Mayo together. Add cheese and diced celery and pepper. Once noodles are done add into bowl, and stir till cheese melts. Top with tomatoes and serve! Enjoy!!

I'm awed by His love for me! That He took my place, my sin, my punishment dying a cruel death on the cross so that I could have ETERNAL life! 

What an amazing God! How it makes me love Him more! How I want to serve Him more!

Chocolate Chip Banana Bread

The chocolate chips added to this banana bread make  it an extra special treat! 



1  ¾ cups all-purpose flour
2/3 cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe bananas (about 3 medium)
1/3 butter
2 tablespoons milk
2 eggs
¼ cup chopped nuts, optional (I used chocolate chips- yummy!) 
Semi-sweet Chocolate chips, optional

In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda, and salt. Add mashed banana; butter, and milk. Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. Add eggs and remaining flour; beat till blended. Stir in nuts in desired.
Pour batter into a greased 8x4x2-inch loaf pan. If using chocolate chips sprinkle desired amount on top (I did it till the top was covered). Swirl in with a butter knife.

Bake in a 350° oven for 30 minutes. After 30 minutes turn oven down to 300° and bake for another 30 minutes or till toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan; cool thoroughly before slicing. Makes 1 loaf (16 servings).
