Honey Cloud Pancake

This pancake is perfect when you want a pancake that is out of the ordinary! It's light as a cloud as the name indicates! Whipped egg white is folded in which makes it light and airy!


  • 3 large eggs, separated  
  • 1/2 cup of warmed milk  
  • 1/2 cup of white flour  
  • 1 pinch of salt  
  • 4 teaspoons of honey (or I used half honey, half maple syrup)  
  • 1/2 teaspoon vanilla extract  
  • 1 tablespoon of butter  
  • Soft fruits  
  • Honey
    Heat the oven to 400°F. 
    Heat two small 6″ oven proof dishes (or I used a 9" pie plate). 
    In one bowl whisk egg whites until white and peaky. 

    To make the main batter, in another bowl, whisk the egg, milk, flour, salt, honey, and vanilla.

    Gently fold the egg white into the batter with a metal spoon.
    Melt one tablespoon of butter in the hot pan. Pour the batter in and cook for a few minutes until starting to set at the very edge (I waited a little too long I think because the whole top was set when I put my fruit on).

    Sprinkle fruit of your choice on top. We decided on strawberries and blueberries since that is what I had on hand, but I've done it with apple and strawberries too!
    Bake in hot oven for 7 minutes until puffed up and golden. Remove and drizzle with honey.
