Healthy and Delicious Banana Muffins
I always love when I find a recipe that both tastes great and is good for me! These muffins accomplish both,and are so easy to whip together. They also freeze wonderfully, and can be ready any time you are craving something sweet.
1 1/2 cups no sugar added apple juice (I've also made them with White Grape or Strawberry Kiwi too. Just use whatever you have on hand.)
1 cup mashed banana (about three)
1/2 cup honey
1/2 cup canola oil
1 3/4 cup whole wheat flour
1 3/4 cup oats
1 TBSP baking powder
1 tsp. baking soda
1 TBSP cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
Combine wet ingredients and mix well. Add in dry ingredients and blend until batter is smooth. Pour into greased muffin tins. Bake at 350 degrees for 15-20 minutes. Let sit for a minute or two in pans before turning onto a wire rack to cool. Enjoy!
